Last Friday at work I challenged my co-worker Kathleen to a vegan bake-off. Some might consider this unfair, because I have a lot more experience making vegan baked goods, however I knew that Kathleen was up to the challenge as she makes a fantastic vegan banana bread.
We tried to make the challenge fall themed as well, just to add another level of difficulty. (But I really still just wanted to use up some of my left over apples!) We searched Food Gawker for different recipes, and I quickly settled on the apple crumble loaf, from A Sweet Twist of Blogging. So, in yet another attempt to ring in fall, I baked a delicious loaf of bread with cinnamon, apples, and a very sugary streusel topping. (It tasted like apple pie encrusted in a sugary loaf of bliss!)
I wish I had a better photo for this bread, because it really was delicious. But I’ll leave you to go to the original blogger’s website for the recipe and prettier photos. Although I will tell you what I changed to make it vegan:
1/2 cup butter –> 1/2 cup Earth Balance
2 large eggs –> 2 egg replacer “eggs”
1/2 cup skim milk –> 1/2 cup soymilk
My Review:
This bread was definitely more cake-like. It was also extremely sugary and delicious. My co-workers really seemed to enjoy it and I’m glad that I was able to find another delicious use for excess apples!
Oh, and as for who won the Bake-Off? We all won in the end, because we were all able to share our delicious baked goods with each other. (Isn’t that heartwarming?)

This look so good! I love breads that taste more like cake, because bread is more socially acceptable to eat for breakfast. (Not that I’ve never eaten cake for breakfast before… lol)
