Blogging for TDIV

I don’t have a new recipe for you today, however, I do have fun news, and old recipes to share with everyone! I’ve started “blogging” for ThisDishisVegetarian.com, a website devoted to vegetarian food and social issues.

My first post was published today, and (you guessed it) it’s a pancake recipe! You can view the post and my recipe here.

I’ll be blogging for TDIV at least once a week, indefinitely. But don’t worry, I won’t be neglecting Vegan Monster.

Incase you’re interested, these are the pancakes! ^^ I highly recommend the recipe. It’s healthy, delicious, vegan and doesn’t require any added sugar.

Recipes Worth Dreaming of:

So, this may come as a surprise to you, but I haven’t cooked anything in a while… at least not anything new. My vegan mac and cheese lasted me far longer than I anticipated (two weeks!), so I haven’t had to cook a dinner meal in a while, and I’ve been trying (desperately) to cut back on my baking because baking every week really does a number on my wallet.

So, instead of showing you something I’ve cooked recently (because I haven’t cooked recently), I’ll show you a few interesting recipes that I’ve been spending my time daydreaming about.

#5 – Baked Pumpkin Doughnut Holes from Sharky Oven Gloves

These pumpkin doughnut holes are what I plan to make for November’s vegan baking challenge. Instead of just a fall theme, for November my co-worker Kathleen and I will have a fall-themed vegan doughnut challenge. (I’m excited, if you couldn’t tell!)

#4 – Lemon Chia Seed Muffins from Laurel of Leaves

In what hopefully passes as a slightly healthier baking escapade, these muffins are extremely tempting. I bought chia seeds for the first time a couple of weeks ago and I’ve been interested in finding a way to bake with them. Right now the farthest I’ve gone is adding a spoonful to my yogurt or oatmeal in the morning.

#3 – Banana S’mores Pancakes from Kiss My Broccoli

S’mores are definitely my downfall when it comes to veganism. Basically I have trouble with anything concerning chocolate. So, think of how delighted I was to find this recipe which contained two of my favorite foods, chocolate and pancakes! Now, I must take this moment to reinforce my earlier rule about chocolate at breakfast: Don’t eat chocolate at breakfast! I know this may sound insane to some people, but too much chocolate at breakfast is just a bad idea for me. I can’t handle that much sweet stuff in the morning. (I mean I already slap a hefty bunch of maple syrup on everything!) So, these will likely be lunch or dinner pancakes, but either way, I plan to enjoy them very soon!

#2 – Avocado Chocolate Mousse from Cooking Books

I’ve been dreaming about making chocolate pudding with avocado for years, ever since I officially gave up dairy a few years ago. Unfortunately, I haven’t had the guts to make it yet. Plus, whenever I have ripe avocados lying around, its really difficult to decide what to do with them, and guacamole is usually the simplest answer. I’ll have to get on this one asap!

#1 – Black Bean and Orange Brownies from Tutupa’s Lab

I stumbled across this recipe on Food Gawker a week or so ago and haven’t been able to get it out of my mind. I’ve seen brownie recipes that use black beans before and I’ve been tempted to try them, but the addition of orange in this recipe just seems like a stroke of genius! I am determined to make this recipe, and soon!
